The name “Scratch” is a nod to their way of working, with the entire operation having been designed and built from scratch. They use custom-made pot stills, and the facilities are powered by renewable electricity. Most waste material is recycled as part of the production process here.
Their rums are made by fermenting high-quality British refined molasses using a wide range of commercial and wild yeast strains. This is then blended with water from a well on the estate. The rums are matured in a range of oak casks, including American Bourbon, Scotch whisky and charred new oak. Experimentation with different yeasts, casks and processes is readily embraced. The duo display great enthusiasm and open-mindedness, and they are set to become big names in the years ahead. The 2023 Winter Release was their inaugural single-cask bottling.
